This recipe is from the Willy Street Co-op in Madison, WI. It's a great vegan option, tastes amazing, and goes well on bread for a quick sandwich lunch.

Ingredients

  • 2 1/2 lbs tofu
  • 1/4 cup tamari
  • 1/4 cup sesame oil
  • 1 tablespoon curry powder
  • 1 tablespoon paprika
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon fennel seeds
  • 1/2 tablespoon chili powder
  • 1/2 cup celery
  • 1/2 red onion
  • 1 carrot
  • 1/2 bunch parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Vegenaise

Instructions

Preheat the oven to 350 degrees Fahrenheit.

Place the cubed tofu in a large mixing bowl. Drizzle with the tamari and sesame oil and toss. Add the curry powder, paprika, cayenne, fennel, and chili powder. Toss to coat. Spread the tofu cubes (with the liquid) on baking sheets in a single layer. Bake for 15-25 minutes until a light crust forms. Remove from oven and allow to cool.

In a large mixing bowl, mix together the celery, red onion, carrots, parsley, and Vegenaise. Sprinkle with salt and pepper and mix well. Add the tofu and gently toss to combine.

Serve cold or at room temperature. Enjoy!
